Dining is certainly a major attraction of any stay here with regional produce very much in evidence from the local Bathurst area. Christine is one of the local gourmet scene's most devoted supporters and a real driving force in its evolution, hosting events, organizing gourmet tours and experiences for guests, using local ingredients on the menus and now also featuring them at the Bishop's Court Delizioso Cooking School.

Christine and her local 'Taste' partners wow all those who take part in classes such as Spice It Up, Men in the Kitchen, Cool Comfort Food, The Good Drop – the art of matching food and wine, Secret Women's Business, Sensational Chocolate, Seasonal and Regional, From Farm to Plate and Italian Al Fresco in the Vineyard, just some of the options on the 2008 program.

The classes are designed to be fun and practical with everyone cooking as a team and then dining together which is fun for couples or for groups of friends who may be celebrating a special event or looking for a destination to spend quality time together. Guests who have come on their own have also been known to be so impressed by the experience that they have returned with groups for corporate and business team building.
